I love breakfast treats just as much as the next girl, but if I’m going to have them… I’m going to make them, so I know what’s in them and I can ensure they’re healthy for the whole family! These muffins are pretty amazing & my fitness friends just LOVE them!! Give ’em a try…..

Power Muffins: Blueberry + Oatmeal + Yogurt

Ingredients”
2 cups oat flour
1 cup quick cook oats
1/4 cup + 1 Tablespoon + 1 teaspoon coconut sugar (or Stevia)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups honey nonfat Greek yogurt (I like Chobani)
2 large eggs, lightly beaten
4 Tablespoons coconut oil
1 teaspoon vanilla extract
1 cup fresh blueberries

Instructions:
1. Heat oven to 350°.
2. Coat muffin tin with cooking spray or liners.
3. Combine flour, sugar, oats, baking powder, baking soda and salt in a bowl.
4. Combine yogurt, eggs, oil and vanilla in a second bowl.
5. Fold yogurt mixture into dry mixture; stir to combine completely.
6. Gently fold in blueberries.
7. Spoon into muffin tins (don’t be afraid to fill them full).
8. Bake until top is golden and springs back when you gently touch it, 20-25 minutes.
Makes 12 muffins, serving is 1 muffin. Approx 215 calories per muffin!

Frohes Oster Montag … I don’t know about America, but as a german .. we celebrate Easter on Sunday like always and then the have EASTER MONDAY or OSTER MONTAG as another Holiday is an annual public holiday in Germany that follows Easter Sunday, which remembers prednisone Jesus Christ’s resurrection, according to Christian belief. It is observed with various local customs. These include early morning candle-lit parades, walks in the countryside and egg races.
